Ingredients
  

Vegetables
  • 2 medium Zucchini sliced
  • 2 medium Yellow Squash sliced
  • 1 cup Bell Pepper sliced
  • 1 cup Carrot julienned
  • 3 cloves Garlic minced
Sauce
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Olive Oil
  • 1 teaspoon Sesame Oil
  • 1 teaspoon Honey optional
  • 1 teaspoon Ginger grated
Garnish
  • 2 tablespoons Sesame Seeds toasted
  • 2 tablespoons Green Onions sliced

Method
 

Prepare the Vegetables
  1. Wash and slice the zucchini and yellow squash into thin rounds.
  2. Julienne the carrot and slice the bell pepper.
  3. Mince the garlic and grate the ginger.
Make the Sauce
  1. In a small bowl, mix together the soy sauce, olive oil, sesame oil, honey, and grated ginger.
Stir-Fry the Vegetables
  1. Heat the wok over medium-high heat and add the olive oil.
  2. Add the minced garlic and sauté for 30 seconds until fragrant.
  3. Add the zucchini, yellow squash, bell pepper, and carrot. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
  4. Pour the sauce over the vegetables and stir well to combine. Cook for an additional 2 minutes.
Serve
  1. Remove from heat and garnish with toasted sesame seeds and sliced green onions. Serve warm.
