Tomato Basil Pasta

Ingredients
  

Pasta
  • 12 oz spaghetti or any pasta of choice
Sauce
  • 2 tbsp olive oil extra virgin
  • 4 cloves garlic minced
  • 4 cups cherry tomatoes halved
  • 1 cup fresh basil chopped
  • 1 tsp salt to taste
  • 1/2 tsp black pepper freshly ground
  • 1/4 cup parmesan cheese grated, optional

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. Drain the pasta in a colander and set aside, reserving a cup of pasta water.
Prepare Sauce
  1. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the halved cherry tomatoes, salt, and pepper. Cook for about 5-7 minutes until the tomatoes start to soften.
  3. Stir in the chopped basil and cook for another minute.
Combine
  1. Add the drained pasta to the skillet with the sauce. Toss to combine, adding reserved pasta water as needed to achieve desired consistency.
  2. Serve immediately, topped with grated parmesan cheese if desired.

Notes

For a spicier version, add red pepper flakes to the sauce.
