Ingredients
  

  • 1 pound coleslaw mix
  • 3 cups shredded cooked chicken
  • 1/4 cup chopped fresh scallions
  • 1 each red bell pepper chopped
  • 1/2 cup chopped peanuts
  • small handful cilantro chopped, optional
  • small handful basil sliced thin or torn, optional
  • salt to taste
  • pepper to taste
  • 5 tablespoons creamy peanut butter
  • 3 tablespoons water or more as needed
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1/2 teaspoon toasted sesame oil
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon garlic powder

Method
 

  1. In a large bowl, combine coleslaw mix, shredded cooked chicken, chopped scallions, chopped red bell pepper, and chopped peanuts.
  2. In a separate bowl, whisk together peanut butter, water, soy sauce, lime juice, honey, toasted sesame oil, grated ginger, garlic powder, salt, and pepper to create the dressing.
  3. Pour the dressing over the salad mixture and toss to combine.
  4. Add chopped cilantro and basil if using, and toss again.
  5. Serve immediately or refrigerate for later.
