Ingredients
  

Brisket
  • 4 pounds brisket preferably flat cut
Dry Rub
  • 2 tablespoons paprika
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon cayenne pepper optional for heat
Wood Chips
  • 2 cups hickory wood chips soaked in water for 30 minutes

Method
 

Prepare the Brisket
  1. Trim excess fat from the brisket, leaving about 1/4 inch of fat on one side.
  2. Mix all dry rub ingredients in a bowl and generously coat the brisket on all sides.
  3. Wrap the brisket in plastic wrap and refrigerate for at least 4 hours, preferably overnight.
Smoking the Brisket
  1. Preheat the smoker to 225°F (107°C).
  2. Add soaked wood chips to the smoker.
  3. Place the brisket in the smoker, fat side up, and smoke for about 1 hour per pound, or until the internal temperature reaches 195°F (90°C).
  4. Wrap the brisket in foil and let it rest for at least 30 minutes before slicing.
