Salmon and Pasta

A delicious and healthy dish combining tender salmon fillets with pasta, tossed in a light lemon garlic sauce.

Ingredients
  

Pasta
  • 12 oz spaghetti or any pasta of choice
Salmon
  • 1 lb salmon fillet skinless
Sauce
  • 3 tbsp olive oil extra virgin
  • 3 cloves garlic minced
  • 1 lemon juice freshly squeezed
  • 1 tsp zest from the lemon
  • 1/4 cup fresh parsley chopped

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Prepare the Salmon
  1. While the pasta is cooking, heat olive oil in a skillet over medium heat.
  2. Season the salmon fillet with salt and black pepper. Place it in the skillet and cook for about 4-5 minutes on each side, or until cooked through.
  3. Remove the salmon from the skillet and flake it into bite-sized pieces.
Make the Sauce
  1. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  2. Add the lemon juice and zest, stirring to combine.
  3. Add the cooked pasta and reserved pasta water, tossing to coat the pasta in the sauce.
  4. Fold in the flaked salmon and chopped parsley, mixing gently.
Serve
  1. Serve the salmon and pasta warm, garnished with additional parsley if desired.

Notes

For added flavor, consider adding capers or cherry tomatoes to the dish.
