Season & Sear Pork Chops
- Pat the pork chops thoroughly dry with paper towels. Season generously on both sides with kosher salt, cracked black pepper, and garlic powder.
- Heat olive oil in a large 12-inch cast iron skillet over medium-high heat until shimmering. Add the pork chops and sear undisturbed for 4 to 5 minutes per side until deeply golden brown. Transfer pork chops to a warm plate and tent with foil (they will finish cooking in the sauce).
Caramelize Apples & Onions
- Reduce skillet heat to medium. Melt the butter in the same skillet. Add sliced onions and apples, sautéing for 5 to 6 minutes, stirring occasionally, until onions are softened and apples are caramelized around the edges.
Reduce Cider Glaze & Finish
- Pour in the fresh apple cider, Dijon mustard, maple syrup, apple cider vinegar, thyme sprigs, and rosemary. Use a wooden spatula to scrape up any browned flavorful bits stuck to the bottom of the skillet.
- Bring sauce to a simmer and cook for 3 to 4 minutes until slightly reduced and glossy.
- Return the seared pork chops and any rested juices to the skillet. Spoon the bubbling cider glaze and caramelized apples over the chops. Simmer gently for 3 to 4 minutes until pork reaches an internal temperature of 145°F (63°C).
- Remove from heat, discard herb sprigs, rest for 5 minutes, and serve warm with the glazed apples and pan sauce.
