Ingredients
  

Vegetables
  • 2 cups green cabbage shredded
  • 1 cup carrots shredded
  • 1 cup red cabbage shredded
  • 1 cup fresh cilantro chopped
  • 1 medium jalapeño seeded and minced
Dressing
  • 3 tablespoons lime juice freshly squeezed
  • 2 tablespoons olive oil
  • 1 teaspoon honey or agave syrup
  • 1 teaspoon ground cumin
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

Method
 

Prepare the Vegetables
  1. In a large mixing bowl, combine the shredded green cabbage, shredded red cabbage, shredded carrots, chopped cilantro, and minced jalapeño.
Make the Dressing
  1. In a separate bowl, whisk together the lime juice, olive oil, honey, ground cumin, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the vegetable mixture and toss until everything is well coated. Adjust seasoning if necessary.
  2. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
