Ingredients
  

Salad Base
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1 teaspoon dried oregano

Method
 

Prepare Quinoa
  1. In a pot, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and let cool.
Make Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
Combine Salad
  1. In a large mixing bowl, combine cooled quinoa, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and parsley. Pour dressing over the salad and toss to combine.
Serve
  1. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.

Notes
