Ingredients
  

Cupcake Batter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
Coconut Pecan Frosting
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 1/2 cup butter softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup evaporated milk

Method
 

Prepare Cupcakes
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
  3. In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Divide the batter evenly among the cupcake liners.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cupcakes to cool completely before frosting.
Make Frosting
  1. In a saucepan over medium heat, combine the butter, evaporated milk, and powdered sugar.
  2. Cook, stirring constantly, until the mixture thickens, about 10 minutes.
  3. Remove from heat and stir in the coconut, pecans, and vanilla extract.
  4. Let the frosting cool slightly before spreading it on the cooled cupcakes.
