  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 large egg yolk
  • 2 tablespoons ice water
Filling and Topping
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese softened
  • 1 cup mixed fresh fruits such as strawberries, blueberries, kiwi, and raspberries
  • 1 tablespoon apricot jam for glaze

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour and sugar, then add cold cubed butter, egg yolk, and ice water. Mix until combined.
  2. Press the mixture into a tart pan evenly. Bake for 20-25 minutes or until golden. Remove from oven and let cool completely.
Filling
  1. In another bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  2. In a separate bowl, mix the softened cream cheese until smooth, then gently fold in the whipped cream mixture.
  3. Spread the cream cheese filling over the cooled tart crust.
  4. Arrange the mixed fresh fruits on top of the filling.
  5. Brush the fruits with apricot jam for glaze before serving.
