Ingredients
  

Chicken
  • 4 pieces chicken thighs bone-in, skin-on
  • 1 cup buttermilk for marinating
  • 2 cups all-purpose flour for coating
  • 1 tablespoon paprika for seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups vegetable oil for frying
Sides
  • 4 servings mashed potatoes with gravy
  • 4 servings coleslaw

Method
 

Prepare Chicken
  1. In a mixing bowl, combine buttermilk, paprika, garlic powder, onion powder, salt, and pepper. Add chicken thighs and marinate for at least 1 hour, preferably overnight.
Coat Chicken
  1. In another bowl, add flour. Remove chicken from marinade, allowing excess to drip off, then dredge in flour until fully coated.
Fry Chicken
  1. In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add chicken pieces. Fry for about 12-15 minutes per side, or until golden brown and internal temperature reaches 165°F (75°C).
  2. Remove chicken and place on paper towels to drain excess oil.
Serve
  1. Serve fried chicken hot with mashed potatoes and coleslaw on the side.

Notes

For extra crispy chicken, double-dip the chicken in buttermilk and flour before frying.
