Fig Preserves

Ingredients
  

Fruits
  • 2 pounds fresh figs washed and stems removed
Sweeteners
  • 1 cup granulated sugar
  • 1 cup brown sugar
Acid
  • 1 lemon juice freshly squeezed
Spices
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon optional

Method
 

Prepare the Figs
  1. Chop the figs into small pieces and place them in a large pot.
Combine Ingredients
  1. Add granulated sugar, brown sugar, lemon juice, vanilla extract, and cinnamon to the pot with figs.
Cook the Mixture
  1. Cook over medium heat, stirring frequently until the sugars dissolve.
  2. Bring the mixture to a boil, then reduce heat and simmer for about 45 minutes, stirring occasionally until thickened.
Jar the Preserves
  1. Pour the hot fig preserves into sterilized canning jars, leaving about 1/4 inch headspace.
  2. Seal the jars and process in a boiling water bath for 10 minutes.
