Ingredients
  

Salad Ingredients
  • 2 cups edamame shelled and cooked
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
Dressing
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or agave syrup for vegan option
  • 1 teaspoon sesame seeds toasted

Method
 

Prepare the Salad
  1. In a pot, bring water to a boil and add the edamame. Cook for 3-5 minutes until tender. Drain and rinse under cold water.
  2. In a large mixing bowl, combine the cooked edamame, cherry tomatoes, cucumber, red onion, and cilantro.
Make the Dressing
  1. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, and sesame seeds.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to combine. Serve immediately or chill in the refrigerator for 30 minutes before serving.
