  • 1 Tbsp dijon mustard
  • 1 Tbsp honey
  • Salt to taste
  • Black pepper freshly ground, to taste
Salad
  • 3/4 cup pecans broken or roughly chopped
  • 1 1/2 Tbsp brown sugar
  • 1/2 Tbsp butter for toasting pecans
  • 10 oz baby spinach
  • 1 lb fresh strawberries hulled and sliced
  • 5 oz feta cheese crumbled
  • 1/3 small red onion thinly sliced

Method
 

Dressing Preparation
  1. In a small bowl, whisk together balsamic vinegar, olive oil, dijon mustard, honey, salt, and pepper to create the vinaigrette.
Toasting Pecans
  1. In a skillet over medium heat, melt the butter and stir in the brown sugar until dissolved. Add the pecans and toast for a few minutes until golden and fragrant.
Assembly
  1. In a large bowl, combine baby spinach, strawberries, feta cheese, and red onion.
  2. Drizzle the vinaigrette over the salad and toss gently to combine.
