Method
Prep Oven & Apple Filling
- Preheat oven to 375°F (190°C). Lightly butter a 10-inch or 12-inch cast iron skillet or 9x13-inch ceramic baking dish.
- In a large mixing bowl, toss sliced apples with dark brown sugar, granulated sugar, cornstarch, cinnamon, nutmeg, lemon juice, vanilla paste, and melted butter until evenly coated. Spread apple mixture evenly into the prepared skillet.
Make Biscuit Dough
- In a separate bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Add cold cubed butter. Use a pastry blender or your fingertips to work butter into dry ingredients until coarse crumbs with pea-sized butter bits form.
- Pour in cold buttermilk and vanilla. Stir gently with a fork just until a shaggy, soft dough comes together. Do not overmix, keeping the butter cold for flaky pockets.
Assemble, Bake & Serve
- Using a large cookie scoop or spoon, drop mounds of biscuit dough evenly across the spiced apples, leaving small spaces between for steam to escape and juices to bubble up.
- Brush tops of biscuit mounds with melted butter and generously sprinkle with cinnamon turbinado sugar.
- Bake at 375°F for 35 to 40 minutes until apple juices are bubbling vigorously and biscuit tops are deep golden brown and baked through. Cool for 15 minutes before spooning warm cobbler into bowls topped with melting vanilla ice cream.
