Method
Slow Onion Caramelization
- Melt butter with olive oil in a large Dutch oven over medium heat. Add thinly sliced onions, salt, pepper, and sugar. Toss to coat thoroughly.
- Cook uncovered for 35 to 45 minutes, stirring every few minutes. The onions will soften, release moisture, and gradually turn into a rich, sweet, mahogany-brown caramelized jam. Add minced garlic and cook for 1 additional minute until fragrant.
- Deglaze the pot by pouring in the dry white wine, scraping all caramelized browned bits (fond) from the bottom. Simmer for 3 minutes until wine is mostly evaporated.
Simmer, Broil & Serve
- Add beef bone broth, Worcestershire sauce, fresh thyme sprigs, and bay leaves. Bring to a gentle boil, then reduce heat to low and simmer partially covered for 20 minutes to meld flavors.
- Discard thyme stems and bay leaves. Taste broth and adjust salt and black pepper as needed.
- Arrange oven-safe ceramic soup crocks on a heavy baking sheet. Ladle piping hot soup into each crock. Float 1 to 2 slices of toasted baguette on top of each bowl.
- Mound generously with shredded Gruyère and Parmesan cheese, allowing cheese to drape slightly over the rim. Broil on HIGH for 3 to 4 minutes until cheese is bubbling, gooey, and blistered golden brown. Garnish with fresh thyme and serve hot!
