  • 1 cup Buttermilk for marinating chicken
  • 1 tbsp Cajun seasoning for marinating chicken
Fried Chicken Coating
  • 2 cups Cornmeal for frying
Sweet Potato Pie
  • 2 lbs Sweet potatoes boiled and mashed
  • 1 cup Sugar
  • 1 tbsp Cinnamon
  • 1 tbsp Nutmeg
  • 1 pie Pie crust for sweet potato pie

  • 1 cup Black-eyed peas to serve with

Method
 

Preparation
  1. Wash and chop the collard greens.
  2. Marinate the chicken thighs in buttermilk and Cajun seasoning.
  3. Fry the marinated chicken in cornmeal until golden brown.
  4. Boil and mash the sweet potatoes, then mix in sugar, cinnamon, and nutmeg.
  5. Prepare the pie crust and fill it with the sweet potato mixture.
  6. Cook the collard greens and serve with cooked rice, black-eyed peas, and corn.
