  • 1 tbsp tomato paste

  • 2 small roma tomatoes chopped
  • 1 cup iceberg lettuce shredded
  • 1/4 cup cotija cheese
  • pickled onions to taste
  • 2/3 cup non fat plain greek yogurt
  • 1/4 cup red salsa
  • 1/2 tbsp taco seasoning for beef

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C) and prepare a baking sheet.
  2. Toss the chopped potatoes with olive oil, taco seasoning, and salt. Spread them evenly on the baking sheet.
  3. Roast the potatoes in the oven for about 30 minutes, or until crispy and golden.
Cooking Beef
