  • 3-4 pieces croissants cut into 2-inch cubes
  • 10 large eggs
  • 2 cups milk
  • 1 tsp Dijon mustard
  • 1/8 tsp nutmeg
  • 1/2 tsp salt plus more to taste
  • 1/4 tsp black pepper plus more to taste
  • 1/8 tsp cayenne pepper
  • 1 piece shallot minced
  • 2 tbsp olive oil or butter divided
  • 12 oz frozen chopped spinach thawed and squeezed dry
  • 1 cup Gruyere cheese shredded
  • 1 cup feta cheese crumbled

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together eggs, milk, Dijon mustard, nutmeg, salt, black pepper, and cayenne pepper.
  3. In a skillet, heat 1 tablespoon of olive oil or butter over medium heat and sauté the minced shallot until translucent.
  4. Add the thawed spinach to the skillet and stir to combine, cooking until heated through. Remove from heat.
  5. In a greased baking dish, layer the croissant cubes, sautéed spinach mixture, Gruyere cheese, and feta cheese.
  6. Pour the egg mixture over the layered ingredients, ensuring even coverage.
  7. Drizzle with remaining olive oil or butter.
  8. Bake for 50 minutes, or until the strata is set and golden brown on top.
