  • 2 cups rolled oats
  • 1/2 cup chopped walnuts
  • 1/3 cup brown sugar
  • 1 teaspoon aluminum-free baking powder
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoon fine-grain sea salt
Wet Ingredients
  • 2 cups milk of your choice
  • 1 large egg
  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons pure vanilla extract
Fruits
  • 1.5 cups mix of chopped strawberries, cherries, and/or blueberries
  • 2 ripe bananas, peeled and cut into 1/2-inch pieces

Method
 

Baking Process
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the rolled oats, chopped walnuts, brown sugar, baking powder, ground cinnamon, and sea salt.
  3. In another bowl, mix together the chopped berries and banana pieces.
  4. In a separate bowl, whisk together the milk, egg, olive oil, and vanilla extract.
  5. Combine the wet ingredients with the dry ingredients and mix until just combined.
  6. Gently fold in the berry and banana mixture.
  7. Divide the mixture into greased muffin cups or a greased baking dish.
  8. Bake for 40 minutes, or until the tops are golden and set.
  9. Allow to cool slightly before serving.
