Crispy Smashed Potatoes

Deliciously crispy on the outside and fluffy on the inside, these smashed potatoes are the perfect side dish.

Ingredients
  

Potatoes
  • 2 pounds baby potatoes or small Yukon Gold potatoes
Seasoning
  • 3 tablespoons olive oil for drizzling
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

Prepare the Potatoes
  1. Preheat the oven to 450°F (230°C).
  2. Place the baby potatoes in a pot and cover with water. Bring to a boil and cook until fork-tender, about 15-20 minutes.
  3. Drain the potatoes and let them cool slightly.
Smash and Season
  1. Line a baking sheet with parchment paper.
  2. Place the potatoes on the baking sheet and use a fork to gently smash each potato until flattened but still intact.
  3. Drizzle olive oil over the smashed potatoes and sprinkle with garlic powder, paprika, salt, and black pepper.
Bake
  1. Bake in the preheated oven for 20-25 minutes, or until the potatoes are golden brown and crispy.
  2. Remove from the oven and garnish with chopped parsley before serving.

Notes

For extra crispiness, you can broil the potatoes for an additional 2-3 minutes after baking.
