Prepare Cookie Dough
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the edges are lightly golden.
Prepare Creme Brulee Topping
- In a saucepan, heat the heavy cream over medium heat until just simmering.
- In a bowl, whisk together the egg yolk, sugar, and vanilla extract until smooth.
- Slowly pour the hot cream into the egg mixture, whisking constantly to temper the eggs.
- Once combined, pour the mixture over the baked cookies.
- Sprinkle the tops with granulated sugar and use a kitchen torch to caramelize the sugar until golden brown.
