Ingredients
  

Cookie Base
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour sifted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Creme Brulee Topping
  • 1/2 cup heavy cream
  • 1 large egg yolk
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons granulated sugar for caramelizing

Method
 

Prepare Cookie Dough
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
Prepare Creme Brulee Topping
  1. In a saucepan, heat the heavy cream over medium heat until just simmering.
  2. In a bowl, whisk together the egg yolk, sugar, and vanilla extract until smooth.
  3. Slowly pour the hot cream into the egg mixture, whisking constantly to temper the eggs.
  4. Once combined, pour the mixture over the baked cookies.
  5. Sprinkle the tops with granulated sugar and use a kitchen torch to caramelize the sugar until golden brown.
