Slow Cooking & Finishing
- Place the raw chicken breasts at the bottom of a 6-quart slow cooker. Add drained cannellini beans, fire-roasted corn, green chiles, diced onion, minced garlic, cumin, chili powder, oregano, salt, and black pepper.
- Pour the low-sodium chicken broth over all the ingredients. Top with the cubed cream cheese blocks.
- Cover and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until chicken is completely tender and shreds effortlessly.
- Remove the chicken breasts to a cutting board and shred with two forks. Whisk the hot chili broth directly in the slow cooker until the melted cream cheese is completely smooth and velvety.
- Return the shredded chicken to the pot along with the shredded Monterey Jack cheese. Stir well and let warm on LOW for another 10-15 minutes until cheese is fully melted and chili has thickened.
- Ladle into deep bowls and top with crispy tortilla strips, sliced avocado, fresh cilantro, sour cream, and a fresh squeeze of lime juice.
