Slow Cooking & Finishing
- Place the cubed russet potatoes, diced onion, minced garlic, salt, black pepper, and garlic powder into a 6-quart slow cooker. Pour the chicken broth over everything.
- Cover and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until potatoes are fork-tender.
- Use an immersion blender or potato masher directly in the slow cooker to mash about half of the potatoes until smooth, leaving some chunks for texture.
- Stir in the heavy cream, sour cream, half of the crumbled bacon, and 1.5 cups of shredded sharp cheddar cheese until melted and velvety.
- Cover and let cook on LOW for another 15-20 minutes until completely warmed through and rich.
- Ladle into bowls and garnish with remaining sharp cheddar, crispy crumbled bacon, and sliced green onions.
