Ingredients
  

Vegetables
  • 1 bunch asparagus trimmed and cut into pieces
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 medium potatoes peeled and diced
  • 4 cups vegetable broth
Dairy
  • 1 cup heavy cream
  • 2 tablespoons butter
Seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon lemon juice freshly squeezed

Method
 

Prepare the Vegetables
  1. In a large saucepan, melt the butter over medium heat. Add the chopped onion and garlic, sauté until translucent.
  2. Add the asparagus pieces and diced potatoes, stir for a few minutes.
Cook the Soup
  1. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 20 minutes, until the vegetables are tender.
Blend and Finish
  1. Using a blender, puree the soup until smooth. Return to the saucepan.
  2. Stir in the heavy cream, salt, pepper, and lemon juice. Heat gently before serving.
