Steps
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef with onion and green bell pepper until the meat is browned and the vegetables are tender.
- Stir in garlic powder, onion powder, salt, crumbled bacon, beans, Rotel, barbecue sauce, and Dijon mustard. Mix well and remove from heat.
- In a separate bowl, combine cornmeal, flour, sugar, baking powder, and kosher salt. Mix well.
- In another bowl, whisk together milk, eggs, and melted butter. Add to the dry ingredients and mix until just combined.
- In a large baking dish, spread the beef mixture evenly, then pour the cornbread batter on top.
- Bake for 30 minutes or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven and sprinkle with cheddar cheese. Return to the oven for an additional 5 minutes until the cheese has melted.
- Let cool slightly before serving. Garnish with parsley.
