Ingredients
  

Meat and Vegetables
  • 1.5 pounds lean ground beef
  • 1 medium yellow onion, diced (approximately 1 cup)
  • 1 medium green bell pepper, diced (approximately 1 cup)
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • Salt (as needed)
  • 10 slices bacon, cooked and crumbled
  • 1 can kidney beans or pinto beans (28 ounces, drained and rinsed)
  • 1 can Rotel (10 ounces, drained)
  • 0.5 cup barbecue sauce
  • 2 tablespoons Dijon mustard
Cornbread Batter
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 0.25 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 1 cup whole milk (room temperature)
  • 2 large eggs (room temperature)
  • 6 tablespoons unsalted butter (melted)
  • 1 cup mild cheddar cheese, shredded
Garnish
  • Parsley (for garnish)

Method
 

Steps
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef with onion and green bell pepper until the meat is browned and the vegetables are tender.
  3. Stir in garlic powder, onion powder, salt, crumbled bacon, beans, Rotel, barbecue sauce, and Dijon mustard. Mix well and remove from heat.
  4. In a separate bowl, combine cornmeal, flour, sugar, baking powder, and kosher salt. Mix well.
  5. In another bowl, whisk together milk, eggs, and melted butter. Add to the dry ingredients and mix until just combined.
  6. In a large baking dish, spread the beef mixture evenly, then pour the cornbread batter on top.
  7. Bake for 30 minutes or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
  8. Remove from the oven and sprinkle with cheddar cheese. Return to the oven for an additional 5 minutes until the cheese has melted.
  9. Let cool slightly before serving. Garnish with parsley.
