Ingredients
  

Marinade
  • 1 cup Greek yogurt for tenderness
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 3 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
Chicken
  • 4 pieces chicken thighs bone-in, skin-on

Method
 

Marinate Chicken
  1. In a bowl, combine Greek yogurt, olive oil, lemon juice, garlic, paprika, salt, black pepper, and oregano. Mix well.
  2. Add chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
Prepare Grill
  1. Light the charcoal grill and allow the coals to heat until they are covered with white ash.
  2. Oil the grill grates to prevent sticking.
Grill Chicken
  1. Remove chicken from marinade and let excess marinade drip off.
  2. Place chicken on the grill, skin side down. Grill for 15-20 minutes, flipping halfway through, until internal temperature reaches 165°F (75°C).
  3. Remove chicken from grill and let rest for 5 minutes before serving.
