Ingredients
  

Base
  • 4 medium bell peppers sliced in half and seeds removed
Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 can black beans rinsed and drained
  • 1 cup corn canned or frozen
  • 1 medium jalapeño sliced
  • 1 cup sour cream for serving
  • 1 medium avocado sliced or diced
  • 1 cup salsa for serving

Method
 

Prepare the Bell Peppers
  1. Preheat the oven to 400°F (200°C).
  2. Slice the bell peppers in half lengthwise and remove the seeds.
Assemble the Nachos
  1. Place the bell pepper halves on a baking sheet, cut side up.
  2. Layer the black beans, corn, and jalapeños evenly over the bell peppers.
  3. Sprinkle shredded cheese generously on top of the toppings.
Bake
  1. Bake in the preheated oven for 15 minutes, or until the cheese is melted and bubbly.
Serve
  1. Remove from the oven and let cool slightly.
  2. Serve with sour cream, salsa, and avocado on the side.
