Ingredients

  • 4 medium ripe bananas peeled and sliced
  • 1 tablespoon lemon juice to prevent browning
  • 1 cup coconut milk or any milk of choice
  • 2 tablespoons honey optional, adjust to taste

Method
 

Preparation
  1. Slice the ripe bananas and place them in a bowl. Drizzle with lemon juice and toss to coat.
  2. Freeze the banana slices for at least 2 hours or until solid.
Blending
  1. Once frozen, place the banana slices in a blender or food processor.
  2. Add coconut milk and honey (if using) to the blender.
  3. Blend until smooth and creamy, scraping down the sides as needed.
Freezing
  1. Transfer the mixture to a freezer-safe container and smooth the top.
  2. Freeze for an additional 1-2 hours until firm.
Serving
  1. Scoop the banana ice cream into bowls and serve immediately.
