Ingredients

Brioche Bread & Custard Soak
  • 1 loaf brioche bread
  • 8 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/3 cup granulated sugar
  • 1 tbsp vanilla paste
  • 1.5 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp sea salt
Crunchy Pecan Praline Crumble Topping
  • 1/2 cup butter
  • 1/2 cup dark brown sugar
  • 1 cup pecans
  • 1/2 tsp cinnamon
  • 1/4 tsp flaky sea salt
Serving & Glaze
  • 1/2 cup maple syrup
  • 2 tbsp powdered sugar
  • 1 cup fresh berries

Method

Baking Method
  1. Grease a 9x13-inch ceramic baking dish generously with butter. Spread the brioche bread cubes evenly into the dish, packing them gently.
  2. In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla paste, cinnamon, nutmeg, and sea salt until completely smooth and frothy.
  3. Pour the custard evenly over the brioche cubes. Gently press down on the bread with your hands or a spatula to ensure every cube absorbs the custard. (You can bake immediately or cover and refrigerate overnight!).
  4. Preheat oven to 350°F (175°C). In a small bowl, mix melted butter, dark brown sugar, chopped pecans, cinnamon, and flaky sea salt until a crumbly praline forms.
  5. Scatter the pecan praline crumble evenly across the top of the soaked brioche casserole.
  6. Bake uncovered for 38 to 45 minutes until the casserole is puffed, the center is set into a tender custard, and the pecan praline topping is deeply golden, bubbling, and crunchy.
  7. Let rest for 10 minutes. Dust with powdered sugar, drizzle generously with warm pure maple syrup, and serve warm with fresh berries.
