Ingredients
  

Vegetables
  • 1 bunch asparagus trimmed and cut into pieces
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 medium potatoes peeled and diced
  • 4 cups vegetable broth
Dairy
  • 1 cup heavy cream for creaminess
Seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 tablespoon lemon juice for brightness

Method
 

Prepare the Vegetables
  1. In a saucepan, heat a little oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  2. Add the asparagus pieces and diced potatoes, cooking for another 5 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes until vegetables are tender.
Blend the Soup
  1. Using a blender, carefully puree the soup until smooth. Return to the saucepan.
  2. Stir in the heavy cream, salt, black pepper, and lemon juice. Heat through without boiling.
Serve
  1. Ladle the soup into bowls and garnish with additional asparagus tips or a drizzle of cream if desired.

Notes

For a vegan version, substitute heavy cream with coconut cream or a plant-based alternative.
